How to host an ice cream party featuring ice cream sandwiches
For my birthday this year, we celebrated with an ice cream party. To keep things simple, I made four different kinds of ice cream sandwiches in advance, then made sorbet at the party and invited people to bring ice cream, sundae toppings, root beer float ingredients, whatever they wanted. It was the perfect hot summer day, and everyone had fun.
Some ice cream party tips:
- Buy dry ice by the pound at the grocery store on the day of your party (not before, as it off-gasses). Place a few packages of dry ice on the bottom level of your cooler, then add regular ice on top. If it’s not a super-hot day, regular bags of ice work just fine.
- Clean out your freezer in advance of the party so you have an empty shelf for ice cream that arrives with guests.
- If you have guests on special diets, label your specialty ice cream sandwiches and put them in a separate cooler (gluten-free, dairy-free, vegan).
- Keep the drinks simple and low-sugar, since the ice cream is the star. I had some cold brew coffee, fizzy water, a cocktail, and watermelon lemonade.
- Stock up on spoons, small cups, and lots of napkins.
- Having a package of wet naps on hand is helpful.
- Bubbles are great fun for the kids on a hot day.
- Don’t have coolers? A heavy box with a lid lined with a plastic garbage bag will work with dry ice and ice.

- One pint of ice cream makes 14-15 small ice cream sandwiches.
- Ice cream with add-ins that freeze solid (like natural peanut butter) are tough to scoop.
- Label bags in advance so that guests can pick their own flavors.
- If you have guests coming with food allergies, make them something they can eat like fruit sorbet.
- I taped the ingredient lists from my special ice cream and cookies to index cards for guests that needed that level of detail.

Ice cream sandwiches
Ingredients
- 1 pint ice cream
- 28 cookies
Instructions
- Freeze a lined baking sheet for at least an hour. This is your work surface.
- Freeze your cookies as well.
- If it's very hot in your kitchen (do this at night on hot days), work with no more than 3 sandwiches at a time.
- Lay out your cookies baked-side up on the frozen sheet.
- Using a small scoop, form one level scoop for each cookie and place it flat side down onto the cookie.
- Gently press a second cookie on top, squishing the ice cream gently to the edges of the cookie as much as possible.
- Freeze on the tray. Then put into labelled zip top bags.
I LOVE ice cream, my fave dessert, and so much fun for parties. I sometimes make ice cream cakes, and the kids always love it – and I always store away some in the freezer just for me. :)
