Ingredients
  

  • 1 pint ice cream
  • 28 cookies

Instructions
 

  • Freeze a lined baking sheet for at least an hour. This is your work surface.
  • Freeze your cookies as well.
  • If it's very hot in your kitchen (do this at night on hot days), work with no more than 3 sandwiches at a time.
  • Lay out your cookies baked-side up on the frozen sheet.

  • Using a small scoop, form one level scoop for each cookie and place it flat side down onto the cookie.

  • Gently press a second cookie on top, squishing the ice cream gently to the edges of the cookie as much as possible.

  • Freeze on the tray. Then put into labelled zip top bags.
