I ate this tomato-onion jam at a food blogger brunch, and decided to try making and canning jam for the first time in 25 years, renovating her recipe to be sugar-free. (Recipe below.) Made jam. It came out pretty great.
 
The jam is great on toast with cream cheese (real or vegan), and also would be delicious on chicken, pork, or tempeh as a glaze, or over brie for a party.
Suitable for:
 vegan, gluten-free, reduced-sugar diets
Not for:
 low-sodium or migraine diets

Sugar-free tomato-onion jam
Somewhere between jam and chutney...
Ingredients
- 5.5 pounds tomatoes fresh, large, organic, very ripe
- 13 ounces onions red or sweet
- 3/4 cup agave syrup divided
- 1/4 cup apple cider vinegar organic
- 1 tsp smoked paprika
- 1 tsp smoked salt
- 1/2 tsp sea salt kosher salt
- 1/4 tsp white pepper
- 1/2 lemons
- 4 tsp pectin powder plus calcium powder (comes in the package)

How wonderful that you are taking part in this! I bid $35 for a jar and I live in San Diego so no shipping necessary!
Unfortunately as I am in Provence, the shipping would cost more than the jam! Also lucky for us we have a wellfare state where people are taken care of and have a health system in place, so individual charity is not necessary (my brother died leaving a young family and his French wife and four children were well taken care of, son now attending top university in Paris!)
