If you’re hosting an Easter party this weekend, here are my suggestions for a healthy menu that’s gluten-free and plant-based. Of course, you can always add a spiral-sliced ham or rotisserie chicken for the carnivores!
Cucumber avocado soup (cold)
Proscuitto-wrapped dates stuffed with cream cheese and jalapenos (can be made vegan)
Asparagus potato tart with white truffle oil
Vegan strata, a breakfast casserole or traditional strata (Canadian bacon or proscuitto optional)
Fingerling potatoes with creamy pesto dipping sauce
