Wondering what to serve on Labor Day if you or someone in your life has migraines? I’ve got you covered.
Here’s what I eat on BBQ-style holidays. This menu is low-stress, good for everyone, and allows me to relax and enjoy being with friends.
Potato salad: I just mix cooked and cooled potatoes with Just Mayo egg-free spread (since I am sensitive to eggs) or use high-quality mayo. Add finely chopped celery and freshly ground black pepper. Done!
Coleslaw: Use the same mayo, mix with a bag of pre-shredded cabbage or a blend of cabbage, carrots, and broccoli stems. Done!
Beef, lamb, or turkey burgers: Use the highest-quality meat you can afford, grill to your taste. Top with mayo or mayo mixed with a little mustard powder (if you’re missing condiments), sliced cucumber instead of pickles, and use either gluten-free buns or a lettuce wrap.
Make coconut whipped cream, top with fresh blueberries, strawberries, and/or blackberries. Or if you’re feeling like baking, make my gluten-free blueberry pie, following the notes to make it migraine-friendly.
