Farro salad with tomatoes, mushrooms, and basil (To renovate: Swap out red rice for the farro if you are gluten-free and use wheat-free tamari instead of soy sauce). Farro is a type of wheat so is NOT gluten-free. I’m guessing that red rice would have the most similar nutty, hearty consistency for this dish. I’ll let you know if I try it!
