Savory chiles from Hatch, New Mexico are only available for a short time in the fall. People believe the unique soil and 4,000 foot elevation produce a special flavor. They are similar in size and shape to Anaheim chiles, and range from mild to fairly spicy. As with most chiles, the heat is concentrated in the seeds and ribs.

Scalloped potatoes with roasted Hatch chiles

- 5 chile peppers (Hatch or Anaheim mild) or 2-3 red or yellow bell peppers
- 2-3 onions white, yellow, brown
- 1 tbsp olive oil (extra virgin)
- 3 pounds potatoes Yukon gold, russet, or other baking potatoes
- 3 cups rice milk skim milk
- 2 tsp sea salt (omit for low-sodium diets)
- 1 tsp black pepper
- 1/4 tsp chipotle powder
- 1/2 tsp liquid smoke
- 8 ounces cheese grated, vegan, cheddar, Monterey Jack, optional

This is a phenomenal recipe BUT when do you add the chipotle powder and liquid smoke? I added
when I placed the potatoes into the dish, before the milk. OK?

Hi Paul, sorry that the instructions weren’t clearer. You add the chipotle powder, black pepper, and liquid smoke to the milk when you heat it on the stove. I’ve edited the recipe. Enjoy!
