I haven’t made Chex Mix in about a hundred years, but sometimes you gotta take one for the team. I reviewed and tested recipes from Fresh from the Vegan Slow Cooker
by prolific vegan author Robin Robertson. We’ll be giving away one copy of this cookbook on Friday, October 25th-Monday, October 28th (our monthly giveaway for October).
I tested savory Mediterranean cheesecake, a huge hit with my non-vegan writers’ group; Life of the Party mix pictured above, very good and easy (too easy, I could eat the entire batch in one sitting); Indonesian noodle soup, another huge hit at an Asian-themed dinner; barbecue beans with coffee and bourbon, soooo delicious (and may I note that I now have an extremely well stocked liquor cabinet for someone who doesn’t drink); and Italian-stuffed artichokes, worth the work and a big hit with my writers’ group.
What I liked about the book:
200 recipes covering appetizers, soups, stews and chili, bean and grains, hearty mains, vegetables stuffed and otherwise, condiments, desserts, breakfast and bread, and drinks. Thorough introductory chapter will help you see your slow cooker in a different light. Each recipe gives suggestions for which size slow cooker is recommended, cook time, and whether there are gluten-free and soy-free options. Every recipe I tested was excellent.
I wasn’t so keen on:
No photographs, but I didn’t miss them. The cover image is so vibrant and appealing that I didn’t even realize there weren’t photographs inside. The recipe keys in the margin are in lighter green type which makes it a little hard to read them.
I recommend this for:
Anyone with a slow cooker, people following Meatless Monday, busy families, anyone following a gluten-free, vegetarian, or vegan diet.
Today’s post is part of our mission to help you rebuild your health through food and lifestyle choices. Look for posts on Mondays featuring gluten-free, sugar-free recipes made with healthy plant-based ingredients, Tuesday reviews, Wednesday essays, Thursday how-to’s, and Flashback Friday recipes. We’ll have monthly giveaways on the last Friday of the month.
Here’s the book if you want to check it out:
The Chex Mix actually looks yummy! I would love to try this cookbook, since I’m vegetarian and a big slow cooker fan.
Hi Trish, I thought it would be fun to feature something unexpected from a slow cooker book. And I never ever would have thought of making Chex mix in my slow cooker.
I would love to try the Italian Stuffed Artichokes, since I love all things artichoke!
The Life of the Party Mix sounds like a great thing to bring to gatherings, since I am always looking for something to snack on that meets my needs.
And, October 25th is my birthday.
Hi Jean, yes, that would be great to bring to parties for sure. There is no way anyone can tell it’s gluten-free or vegan either. Happy birthday!
