Product review: Chef'sChoice pronto pro manual knife sharpener | Recipe RenovatorI’m excited to be giving away this knife sharpener in my September giveaway, which begins on Friday. I own and tested the electric version of this sharpener (leaving the prize unopened), so keep in mind that I haven’t used this version when reading my review.

One of the things that happens when you get more serious about cooking is that you realize you need better knives. Some people go out and buy the full set, which is completely unnecessary. You only need three great knives; four if you are fileting fish or meat. You need a chef’s knife, a paring knife, and a serrated knife for cutting bread and citrus. That’s it!

If you’re like me, you start by buying one good knife, then try another, and pretty soon, you have a few. None of them are sharp enough and they don’t match. Luckily for me I only bought two good ones before reading Kitchen Confidential and learning what I really needed. Then I bought my beautiful Japanese Global chef’s knife and paring knife. What I didn’t know until taking a knife class is that European knives and Japanese knives are designed with a different bevel, thus requiring a different angle to sharpen them correctly. You either have to take them to someone who knows that (and the guy at my grocery store on Fridays doesn’t), or buy two different sharpeners! Argh.

Until now. Chef’sChoice knows professional equipment, and they know that people tend to buy different knives and need to sharpen both kinds. Finally, I can take care of my knives properly, with this sharpener! I love it. I just have to remind anyone helping in my kitchen that my knives are wicked sharp, because they are.
