These rely on vegan soy chorizo, but you can also use soy-free quinoa chorizo in this recipe. I used shredded Daiya cheddar cheese. You can use your favorite vegan cheddar-style cheese or vegan cashew cheese. For low-sodium diets, omit the salt and use quinrizo and home-made cashew cheese where you control the sodium.
