I learned this tip while testing recipes from Michael Natkin’s Herbivoracious
cookbook. I always thought that raw red onions were too strong to use in salads or on sandwiches until I tried this. You can use this with any type of onion.
Just cut the onion, then soak in cold ice water for 10-15 minutes.
Drain and pat dry, then use in your recipe as directed.

I have also found that adding a little fresh lemon juice to the water brings out the sugar in the onions…delicious!
